Butter beans make a quick and easy alternative to mashed potatoes. You can use any kind ot tinned beans. This is so easy you can cook this dish in less time than it takes to microwave a meal.

Ingredients

  • 4 boneless, skinless free range chicken breasts
  • salt and freshly ground black pepper

Method

  1. Carefully cut the chicken horizontally almost all the way through the middle and open out. Season. Drizzle with the olive oil and place on a hot griddle for 4-5 minutes. Flip over and cook for a further 3 minutes until the chicken is cooked through.
  2. To make the butter bean mash, pour the beans into a saucepan with the garlic and 100 ml water. Bring to the boil
