This dish works equally well with frozen peas and broad beans. It has to be the fastest way to serve spring vegetables. It’s a perfect partner for steamed fish or barbecued lamb. Try adding some crispy fried bacon for a meaty alternative.

Ingredients

  • 1 gem lettuce
  • 25 g unsalted butter
  • 100 g fresh peas

Method

  1. Cut off the root of the gem lettuce and finely shred with a knife.
  2. Melt the butter in a pan, add the peas, broad beans and sugar snaps and cook tor 2 minutes. Add the stock, season and cook for a further 2 minutes. Finally add the lettuce and serve immediately.
