Apricot and brioche spiced pudding

They say that you can’t improve on a classic, but I really think that this one does. Using brioche gives a richer, more flavoursome pudding.

Ingredients

  • 4 fresh apricots, stoned and diced, or 12 dried apricots
  • 400 g sliced brioche

Method

  1. Sprinkle an even layer of diced apricot into the bottom of an ovenproof dish. Butter the brioche and arrange butter side up over the apricot, Sprinkle the raisins or sultanas over the top.
  2. Make the custard mix, adding the cinnamon, allspice, orange zest and vanilla seeds with the other ingredients for the custard mix. Whisk lightly. Pour through a sieve on to t
