You can make this in 10 minutes! Purple figs have the best flavour and when you buy them give them a little squeeze to make sure they’re ripe.

Ingredients

For the baked figs

  • 4 figs (use purple ones when in season)
  • 4 sprigs of fresh rosemary
  • 1 tab

Method

  1. To make the cream cheese mousse, place the vanilla seeds in a bowl with the cream cheese and sugar and mix lightly. Pour the double cream into a bowl and whisk to soft peaks. Using a spatula, gently fold the cream into the cream cheese. Place in the fridge until needed.
