This very stylish smoked salmon recipe also makes delicious canapés served on thick cucumber slices.

  • 110 g cream cheese
  • 1–1½ tablespoons finely chopped chives or 2 teaspoons finely chopped dill
  • 2–2½ tablespoons cream
  • salt and freshly ground pepper
  • 4 slices of smoked salmon, thinly sliced and about 15cm long
  • ¼ quantity sweet cucumber salad

  • sprigs of fennel or chervil

Mix the cream cheese, chives or dill and cream together and season to taste with salt and freshly ground pepper. Spread the cheese mixture on to each slice of salmon and roll them up carefully. Cover and refrigerate for at least 1 hour.

Next make the cucumber salad.
