  • 1 large egg yolk, preferably free-range
  • 2–2½ tablespoons French mustard
  • 1–1½ tablespoons white sugar
  • 150 ml ground nut or sunflower oil
  • 1–1½ tablespoons white wine vinegar
  • 1–1½ tablespoons finely chopped dill
  • salt and freshly ground pepper


Whisk the egg yolk with the mustard and sugar, drip in the oil drop by drop whisking all the time, then add the vinegar and fresh dill. Season.
