  • 1 medium cucumber
  • 2–4 teaspoons white wine vinegar
  • salt, freshly ground pepper

Method

Finely slice the cucumber (leave peel on if you like it). Sprinkle with wine vinegar and season with salt, freshly ground pepper and a good pinch of sugar. Stir in the chopped fennel and taste.
