For those of you unfamiliar with the word palourdes, it is a type of clam which grows off the West Cork coast, around Kenmare Bay.

Ingredients

  • 48 cockles, or approx. 1.6–1.8 kg palourdes
  • Provençale butter
  • fresh, white breadcrumbs

Method

Prepare in the same way as Moules Provençales.
