Aloo bhaji is a delicious spiced potato dish. Traditionally the potatoes are fried along with the spices, but cooking it slowly produces softer potatoes. This version isn’t especially spicy, so add extra green chillies if desired.
Heat the ghee in the insert pan of a slow cooker or a large frying pan over medium–high heat. Add the potato and onion and cook, stirring, for 3–4 minutes until the onion starts to soften.
Stir in the chilli, ginger, spices and salt and cook for a further 2–3 minutes until the potato is golden.
