Serve these meltingly soft onions as an accompaniment to roasted or grilled meats, if you eat meat, or as part of a feast of vegetarian dishes.


  • 10 small onions
  • 250 ml (9 fl oz/1 cup)


Peel the onions, then use a sharp knife to score a cross into the top of each one. Place the onions in a slow cooker, with the scored side facing up.

Pour the cream and stock over the onions, then scatter with the thyme sprigs, garlic and butter. Season with sea salt and freshly ground black pepper. Cover and cook on low, stirring occasionally, for 5 hours.
