This salad is ideal to put into the slow cooker in the morning to be ready for lunch. It has a hint of spice from the chaat masala, crunch from the pepitas and a little saltiness from the feta.

Ingredients

  • 1 medium cauliflower (about 650–700 g/1 lb 7 oz

Method

Cut the cauliflower into small florets. If using baby carrots, trim the ends then scrub and halve on an angle. For large carrots, peel and cut into 1 cm (½ inch) slices.

Put the cauliflower and carrots in the slow cooker. Drizzle over the olive oil and scatter over the chaat masala. Season with sea salt and freshly ground black pepper and toss well to coat the vegetables in the spice mi
