Cut the cauliflower into small florets. If using baby carrots, trim the ends then scrub and halve on an angle. For large carrots, peel and cut into 1 cm (½ inch) slices.
Put the cauliflower and carrots in the slow cooker. Drizzle over the olive oil and scatter over the chaat masala. Season with sea salt and freshly ground black pepper and toss well to coat the vegetables in the spice mi
