This is a light and fluffy dessert, great in both summer and winter when you don’t want something heavy at the end of a meal. The fluffiness is achieved by whisking the egg whites before adding them to the batter.


  • 60 g ( oz) unsalted butter, chopped, plus some softened butter for greasing
  • 3 eggs


Melt the butter in a very small saucepan over low heat. Set aside to cool for 10 minutes.

Meanwhile, grease the slow cooker with the softened butter.

Place the egg yolks, sugar, lemon zest and lemon juice in a large bowl. Beat until combined, using electric beaters. Add the melted butter and beat until combined, then add the milk and beat until combined. Beat in the flour.
