Here’s a dish for those days when only a hefty hit of blue will satisfy a cheese craving. Stichelton, an unpasteurised version of Stilton made on the Welbeck Estate in Nottinghamshire by ace cheesemaker Joe Schneider, is available from Neal’s Yard Dairy. It ranks as my favourite blue cheese in the world, alongside Irish Cashel Blue and gorgonzola. Actually, I just love blue cheese in general.
