A good salad is a joy during the spring and summer months, but there are times when I tire of green leaves as the base and elect to make an old-fashioned chopped salad. Succotash fits the bill perfectly. Essentially, it’s a mix of corn and broad beans that you can embellish according to what’s in season, or what’s in your larder. You can scale it down by half for a single portion but it’s so delicious I love having it again the next day.
