Some days you want pancakes for dinner, but then you remember you also need to eat your daily greens. This is a compromise of sorts, but by no means a fudge – you get lots of flavour from the Parmesan and it’s a nifty way to use up courgette, in all honesty a vegetable I’m not overly enamoured with. You can always add a few extra greens on the side too: tenderstem broccoli, a fennel salad or leftover roast vegetables pair well with this dish.
