Preheat the oven to 200°C/gas mark 6.
Put the sliced parsnips in a bowl with the maple syrup, oil and nutmeg and rub the parsnips to coat them in the mixture. Place them in a roasting tray or in a baking dish and sprinkle with a pinch of salt. <
