Muffins have been a source of delight since childhood, being quick to mix and bake. I’m not so keen on cupcakes (a little too cutesy for my taste, and always laden with way too much sugary frosting) and find these muffins are closer to their British cousin: the fairy cake.
This recipe is an adaptation of Felicity Cloake’s phenomenal Lemon Drizzle Cake in the Guardian. If you like a classic lemon sponge I really recommend you give her cake a try.
