  • 6 tablespoons (90 g) unsalted butter
  • 3 large bunches flat-leaf parsley


In a medium saucepan, melt the butter over low heat. Stir in the parsley, toss to coat with butter, and cook over low heat, stirring occasionally, for 5 minutes. Stir in the coriander and garlic. Cook, stirring, until the garlic becomes fragrant, 1 to 2 minutes.

Stir in the stock. Bring to a boil. Lower the heat and simmer for 7 minutes. Remove from the heat and stir in the cottage chee
