Celery root is very ugly, with dirty brown, coarse, hairy skin. Peeling it is a bit of a problem, requiring a sharp knife and determination. The reward is the aromatic white flesh. If there is a little extra celery root, cut it into matchstick strips and put it in water to cover with a little lemon juice. When the soup is ready to serve, stir in the raw root for a pleasant crunch.
