This can be smooth or chunky. Unless very young celery is available, which seems impossible for me to find, the stalks will need to be scraped with a vegetable peeler to remove the stringy, fibrous outer layer before using.

This soup seems too simple and too delicious to be true. Everyone I have taken left-overs to immediately wanted the recipe, so here it is.
