I love Ireland and I love lovage. One cold spring day, I had a soup like this in a pub that I probably could never find again. It was a delight. If lovage is unavailable, this shouldn’t be made with anything else. Lovage is worth growing. It is a huge perennial in the same family as celery and stays green from earliest spring late into the fall. In Roman times, it was virtually ubiquitous.
