This is a good potage to warm up a winter night.

Ingredients

  • 1 tablespoon (15 g) unsalted butter
  • 1 medium-to-large onion, thinly sliced

Method

In a medium saucepan, melt the butter over medium heat. Stir in the onion and cook, stirring occasionally, for 5 to 7 minutes, until wilted and translucent.

Stir in the potatoes and stock. Bring to a boil. Lower the heat and simmer, uncovered, for 10 minutes. Stir in the broccoli and spinach. Cover. Simmer until the potatoes and broccoli are completely tender, about 10 more minutes.
