Brandade is a delicious spread made with salt cod, normally served with fried croutons or poached eggs. From an ample supply of leftovers resulting from a large party, I made a soup. It was good enough that I made a recipe so it could be made on purpose. It can be made with stockfish, but I find the taste stronger and less pleasant.

This soup is quite rich. It is nice served with garlic-rubbed croutons floating on top.
