It always seemed strange to me that coastal lands along the Atlantic, the Adriatic, and Mediterranean are rich in recipes for salt cod, a product imported from northern waters. I suspect it is in response to the danger inherent in fishing during inclement cold water that is responsible. Salt cod must be desalinated—have some of its salt leached out with water—before use.
