Pork makes a deep and savory stock. The roasting of the bones gives color and flavor. Use for Pork Barley Soup and Hot-and-Sour Soup.

Ingredients

  • Bones and scraps from roast rack of pork
  • ½ cup (125 ml) red wine or water

Method

Place a rack in the center of the oven. Heat oven to 500°F (260°C; highest gas mark; #9 British regulo).

Put all the bones in a small roasting pan. Roast for 10 minutes. Turn the bones.
