Celery is rather stringy and so this base cannot be successfully puréed in a food processor. It must be passed through a food mill or a sieve. This is used in Celery Soup with Lima Beans, Asparagus, and Peas and can be used in Celery-Tomato Soup.
In a medium saucepan, bring the water and salt to a boil. Stir in the celery. Return to a boil. Lower the heat and simmer, partially covered, stirring occasionally, for 35 minutes.
Pass through the medium disc of a food mill. Use immediately, or refrigerate for up to 3 days or freeze.
