This is a typical German recipe that I have lightened with extra egg whites and flavored with tarragon, lovely if a bit far afield from tradition. These dumplings are pretty filling, so the recipe is ample for four or five people. It can easily be multiplied. Serve in seasoned Beef Stock or Extra-Rich Chicken Stock, and consider adding some whole tarragon leaves to the finished soup.
