These are the cheese version of pâté à choux. They are typical of Burgundy, where they make a hot bite before the meal. I like them served next to soups. A little cayenne pepper can give extra zing. Only by tasting the cheese can one tell if extra salt is needed.

The gougères can be made ahead and refrigerated or frozen. To reheat, preheat the oven to 350°F (177°C; gas mark #4; between #3 and #4 British regulo) and bake on a cookie sheet for 8 minutes.
