A classic French condiment often used in sausages and pâtés, quatre épices turns up in White Bean Soup with Confit and Tomato.


  • ½ cup plus 1 tablespoon (70 g) freshly ground white pepper


Combine all the spices and store in a tightly sealed jar for up to 6 months.
