This is the red sauce for Bollito Misto. The green one is. This makes a savory pasta sauce, or serve it over poached fish.

Ingredients

  • pounds (1 kg) plum tomatoes, coarsely chopped
  • 2 medium onions, coarsely chopped

Method

In a medium saucepan combine the tomatoes, onions, carrots, garlic, hot pepper, and, if using, the celery and parsley over medium heat. Cover and cook, stirring occasionally, until the tomatoes are collapsed and bubbling. Lower the heat and simmer, partially covered and stirring occasionally, for 30 minutes.

Stir in sugar, vinegar, and salt, and return to a boil. Lower the heat and simm
