There are quite a few Southern vegetable recipes that would absolutely mortify the classically trained French chefs who taught me. These recipes disregard proper cooking techniques, but they are freaking delicious. In this one, we cook these babies down so much they are hardly recognizable as squash. The rebel in me finds this recipe particularly satisfying.
