If you want to get your recipe wheels turning, just overplant the bejesus out of something and voilà; necessity is the mother of invention! The first year we had our garden, I was like Oprah at Christmas: “You get some collards, you get some collards!” Friends, relatives, neighbors, the FedEx man, they all got a bag, and there were still more leaves to pick. When even the restaurant had tired of them, it was time to get creative.
