Choose very large sun-dried tomatoes for this dish in order to roll them up with the filling. Sun-dried tomatoes can be used in various ways or enjoyed plain as a snack. However, they are quite salty so it is best to soak them before use in two parts vinegar to one part water for an hour or so, then drain and pat dry. They can then be flavoured with basil, oregano, garlic or chilli and covered with olive oil to be eaten later on: Alternatively, try this recipe.
