Aubergines are greatly enjoyed in Puglia, Calabria, Sicily and Basilicata, and naturally many recipes for them have developed. This is one of the simplest.
Cook the aubergine slices in boiling salted water for 2 minutes, then drain and pat dry. Heat some oil in a large frying pan and fry the aubergine slices until brown on both sides. Lay the slices out on a work surface.
