I very much like the idea of a surprise in an involtino. A piece of meat, fish or vegetable is rolled around a stuffing mixture and then cooked. Here the peppers are cooked twice: first they are roasted to make them pliable and give them a charcoal flavour, then they are rolled up with the filling and baked. The result is very scrumptious indeed.
