High-quality mussels are cultivated in Taranto, the large Itallan port in the Gulf of Taranto in Puglia. The flavour of these mussels is so good that you need add very few ingredients to make a great dish. Mussels are cooked in this way in other regions, too, where they are known as cozze gratinate. They can be eaten hot or cold and are delicious.
