Like many peasant dishes, this owes its invention to poverty. It was devised as a cheap substitute for Parmesan cheese, which used to be a rather expensive commodity reserved for the rich. In fact it is known as poor man’s Parmesan. Nowadays, though, aglio e muddica (garlic and breadcrumbs) offers a pleasant alternative to cheese and no longer deserves the name poor’.
