This simple snack is easy to prepare yet it is a very flavoursome morsel that lifts the spirits. It is similar to the better-known mozzarella in carrozza, but lighter because there is no bread.
Lightly coat the mozzarella slices in flour and then dip them in the beaten egg. Coat with breadcrumbs. Heat some olive oil in a large pan over a moderate heat and fry the mozzarella until it starts to melt, turning the slices once. It is a very quick process. Serve immediately.
