Fried fish is popular in all the coastal areas of Italy. The simplest cooking method is to dust very fresh and tender seafood in flour and then fry it until crisp - ideal for a summer lunch with a fresh tomato salad, good bread and chilled white wine. The small octopuses I used for this recipe were so clean they did not need to be cleaned inside at all.
