In the South it is very common to make an omelette for supper with courgettes, onions, asparagus and many other vegetables. Ideally this recipe should be made with the very small green peppers that look like chillies, but taste very sweet. Easier to find are the normal green peppers, which taste like grass when cooked. This dish can be served as a main course or in smaller slices, as an antipasto.
