One of the most popular rice specialities is the arancino di riso, which comes from Sicily and is now available everywhere. Sold as fast food in cafés and delicatessens, it is called arancino because it is the size and shape of an orange. There are two types, filled with either ragù or cheese. Ideally they are best eaten fresh but, with the advent of microwaves in Italy, they are now usually served warmed up. Here is the cheese version.
