The baked calzone or, as I call it, the inverted pizza, has become popular worldwide wherever there are pizzerias. However, I am very fond of the Neapolitan fried calzoni because they are quicker to make and more fun. They are also known as panzerotti, from panza, meaning tummy, because they puff up while frying. This is a lean version, made with just cheese, but the original also contains prosciutto and salame.
