Here you can try making your own sausages, as long as you can get sausage casing from your butcher and a little gadget with which to inject the filling; otherwise use a piping bag. You can, of course, include different seasonings such as garlic, onion or herbs to suit your own taste. However, I find this recipe (from Puglia) very appealing.
