Many Roman dishes are borrowed from the local Jewish community. Although strict Jews have to follow at least 55 dietary rules, I didn’t feel at all restricted by the two dishes I borrowed from Donatella Limentani Pavoncello, a Roman lady, a conscientious follower of her religion, and an excellent cook and cookery writer. This recipe and the one for Torzelli have been in her family for 400 years and particularly appealed to me for their simplicity. D
