In Sardinia this recipe is made with various types of scaly fish. The marinade and the scales help the flesh remain juicy and flavoursome during grilling. Originally the marinade was made with seawater but because it is difficult to find completely clean and unpolluted, it is better to use water in which you have dissolved some sea salt.
