Despite all the impeccably fresh fish available in the Bay of Naples, you will find plenty of Neapolitans who love preserved fish. Baccalà, or dried salt cod, used to be a very economical way of eating fish. Now that it is not particularly cheap any more it is eaten for nostalgia’s sake and for its highly distinctive flavour. In Naples you can buy baccalà ready desalted and softened for immediate use, which cuts out the lengthy soaking process.
