Campo dei Fiori is a famous Roman square where a market is held daily. There the Romans are spoiled for choice. All kinds of seasonal fruit and vegetables are so appetizingly exhibited and loudly praised that you cannot resist buying. When I visited the market the broad beans were beautifully green and shiny, a reliable indication that they were perfectly fresh and tender. Guanciale is used in many dishes from Lazio.
