This extremely easy dish from Sicily makes a good accompaniment to fish and white meat. Choose small, firm courgettes.
Cut the courgettes into cubes and set aside. Heat the oil in a large pan, add the garlic and fry briefly. Stir in the tomatoes, basil and courgettes, then cover and cook gently for 15–18 minutes, until all the courgettes are tender. Season with salt and serve hot or cold.
