Although potatoes are widely used in Southern Italy, they are not a substitute for bread or pasta. Instead they are treated as a vegetable - served on their own or as an accompaniment to meat or fish. The best results for this recipe are obtained if you use a tiano (terracotta pot) and cook the potatoes in a wood-fired oven. But who today possesses such a ‘luxury’? A deep baking dish and a conventional oven will do.
