If you are served grilled mushrooms in Italy they will usually be large porcini. However, during the mushroom season a variety of both wild and cultivated mushrooms may be used, resulting in an interesting mixture of textures, colours and flavours. This dish is a real delicacy, and ideal for vegetarians. In the South, and particularly in Puglia, the most popular mushroom is the cardoncello, a kind of very meaty oyster mushroom.
